One common thread you will find in just about all of our camping recipes is they are cooked in a Dutch Oven. Dutch Ovens are available in many sizes, from 1 quart to 8 quart. Figure about 1/2 to 1 quart per serving and you will be able to determine how large of a Dutch Oven to buy. And my advice - only buy the best... and that means a "Lodge" brand Dutch Oven. Dutch Ovens can be used over the campfire, or for rainy days or when you need to accurately control the heat, they can be used in a conventional oven. So I suppose these could be called "Dutch Oven" recipes. However, if you don't have a Dutch Oven, don't let it discourage you... however, I highly recommend one for the best results. For example, our Lodge Dutch Oven has indentations in the lid that allow moisture to drip back into the food. This results in very moist cakes and other dishes.
Ingredients:
Mix the Cornbread Mix in a mixing bowl according to directions. Add brown sugar to taste (1~2 tablespoons). Fill the mixture into a Dutch Oven and bake for 15 minutes at 350 deg or until done. The real secret here is baking the cornbread in the Dutch Oven. The bread will come out all nice and moist - almost cake-like, and will have a slight sweetness that you can eat as-is... no need to smother it in butter or other condiment. Once you use a Dutch Oven in your RV, you will surely buy another for home.
Serve with Boondocking Baked Beans or other delicious entree, or as a snack with a bit of butter, honey, or other condiment.
